London’s first five-star B Corp™ hotel, One Aldwych in Covent Garden, is launching a pop up Summer Tea Salon in collaboration with Anabela Chan, the first fine jewellery brand in the world to champion laboratory-grown gemstones with a focus on ethical and sustainable innovations.
The Summer Tea Salon is a collaboration between the London-based jewellery designer and Executive Chef Dominic Teague of One Aldwych, who has created a trio of sweet treats, with accompanying iced teas, inspired by the launch of Anabela Chan’s latest collection, Fruit Gems™. This innovative new collection turns waste to wonder by taking over ripened fruits and vegetables, including beetroot, tomatoes, blueberries, dragon fruit and spinach, and extracting their natural pigment to create vibrant gemstones that are then transformed into beautiful pieces of jewellery that minimise food waste in the process.

In line with his own commitment to minimising food waste, Chef Dominic Teague has drawn inspiration from this colourful collection to create a delicious trio of delicacies, served with a refreshing choice of iced teas to be enjoyed in the heart of Covent Garden, where London’s first flower, fruit and vegetable market was founded. Served in the hotel’s iconic Lobby Bar, where the Fruit Gems™ collection will be on display, the tea is priced from £32 per person and features:
Beetroot Cherry Apple, a glossy cherry-red glaze reveals layers of blackberry and beetroot mousse, with a heart of lychee and finished with a yellow ladybird perched on a chocolate sable. Apricot Mille-Feuille, a crisp, caramelised puff pastry layered with apricot and honey compote created from the hotel’s rooftop beehives with a silky diplomat cream and a touch of apricot gel. Raspberry Magic Mushroom, a raspberry jelly and lemon foam, scattered with caramel tuiles and white chocolate spots.
Guests can enjoy a Berry & Hibiscus, Rhubarb & Rose or Elderflower & Apricot iced tea or a chilled class of Bollinger Champagne (at additional cost), a fellow B Corp™ brand whose sustainability values align.

The pop-up Summer Tea Salon will launch at One Aldwych on Saturday 26 July and will be available every weekend until Sunday 14 September 2025, between 12pm and 4pm. Personal shopping experiences at the Anabela Chan boutique can be arranged by appointment, as well as in-suite viewings of the collection for One Aldwych hotel guests. One Aldwych will donate £1 from every table to one of Anabela Chan’s chosen charities, Seeds for Growth which works across London advancing the quality of life, health and wellbeing of people from disadvantaged communities through various projects including food co-ops, community gardens and ecological outreach.
