Meatballs, Ferments and Fika: A New Swedish Breakfast Arrives in Westminster

Wake up to a taste of Sweden with the arrival of the first-ever breakfast from Michelin-starred chef Niklas Ekstedt. Arriving at The Parlour (located in the five-star Great Scotland Yard Hotel, Westminster) on 11th June, the menu brings a Nordic twist to classic breakfast dishes. Think wild mushroom Swedish meatballs, traditional cardamom buns, savoury plates rich in gut-friendly ferments and homemade kombucha.

Savoury Dishes
Dive into a taste of Scandinavia with the Wild Mushroom ‘Meatballs’ – a reimagined plant-based take on the classic dish, served on homemade sourdough with vibrant beetroot slaw and pickled cucumber. The Smoked Juniper Salmon Smörrebröd is a traditional Nordic open sandwich, whilst the Toast Skagen comes with plump Swedish shrimp tossed in dill mayo, layered over toasted sourdough bread with oak leaf, soft-boiled egg and lemon zest.

Homemade Bakery & Sweet Dishes
For those craving a little fika-style indulgence, there’s soft, sticky cardamom buns – known as Kardemummabullar – or for a morning energy boost, try the Overnight Oats Brûlée layered with Scandinavian lingonberries, banana, and chia, finished with a perfectly crisp brûléed top. Sweet-toothed guests will enjoy the Swedish waffles – Våffla – topped with roasted spiced plums and white almonds.

Kombucha & Detox Shots
Drinks are given the full Scandi treatment too. The in-house Ekstedt Kombucha, perfect for fermentation fans, is available in three seasonal flavours or try the Nordic-style wellness shots (including Green Mix or Ginger) for the perfect lagom balance to ease into your day.
