Mauro Colagreco at Raffles London at The OWO Announce a ‘Celebration of Caviar’ Dinner this September

London, September 2025 – For one night only, on Monday the 29th September 2025, culinary worlds will collide at Michelin-Starred Mauro Colagreco at Raffles London at The OWO ‘A Celebration of Caviar’ Dinner. This exclusive Four Hands dinner will bring together acclaimed chefs Leonel Aguirre of Mauro Colagreco and Bertrand Noeureuil of Le Gabriel who recently received his second Michelin star in Bordeaux, France, highlighting Sturia Caviar. The link to Sturia is forged through Chef Mauro Colagreco, who actively champions their sustainable approach to caviar production.

The dinner will be a union of Chef Noeureuil and Chef Aguirre’s cooking styles, with a strong focus on the terroir of Bordeaux, and Sturia Caviar woven throughout each course. Priced at £300 per person, the evening will open with an enticing array of snacks, featuring a Sweet Onion Royale, a Flaky Mushroom Tartlet, an Ex-Dairy Cow Taco layered with red sorrel and liquorice, and a delicate composition of Pine Custard with Smoked Haddock. To follow, and showcasing the star ingredient of the evening, Sturia Caviar will be served with blinis, crème fraîche, and wild capers.

The first starter will be Smoked Sturgeon “Coussinete” paired with vibrant green sorrel, followed by Textures of Sweet Corn complemented by coriander and a Scottish Langoustine Tartare. One of the signature dishes of the evening will be the Pan-Fried Sole “Chambrelent”, served with smoked potatoes, sea pine, and woodland broth – a tribute to coastal terroir. Diners will also be able to enjoy Merrifield Farm Duck, accented by preserved berries, dulse seaweed, and smoked fat. To finish, there will be a duo of inventive desserts, firstly the White Chocolate Ice Cream with roasted lemon purée, capers, and sea lettuce, followed by a Layered Vine Leaf Pastry with grapes steeped in floral infusion and a bright Verjuice Ice Cream. The experience will end with an assortment of mignardises, served alongside tea and coffee – a final, elegant note.

To accompany the evening, there will be a selection of wines served from Château Angelus, one of the largest and most prestigious estates in St Emilion Bordeaux, including 1er Grand Cru Classé A, and Laurent Perrier MV Grand Siècle Iteration N° 26 Brut, for guests to enjoy.
