Mauro Colagreco and The Spy Bar Bring an Exclusive Summer Collaboration to Raffles London at The OWO

A unique dining and cocktail experience available for a limited time only at Raffles London at The OWO

Raffles London at The OWO are excited to announce a new collaboration between The Spy Bar and Michelin-starred Chef Mauro Colagreco’s signature restaurant. This one of a kind dining and cocktail experience will invite guests to indulge in Chef Colagreco’s seasonal five course tasting menus, paired with three bespoke cocktails from The Spy Bar, all set within the historic and atmospheric surroundings of the former Old War Office.

Available from Tuesday 17th June until Saturday 16th August, for £195 pp, this limited-edition offering will allow guests to experience Chef Colagreco’s cuisine that focuses on locally produced and seasonal ingredients with an ode to British terroir. The menu is accompanied by three bespoke cocktails, crafted from The Spy Bar, one upon arrival at Mauro Colagreco, one served after dinner in the bar and one to take away.

The evening begins with a welcome cocktail, the Lunar Blossom, a sophisticated reimagining of the classic French 75, inspired by Chef Colagreco’s biodynamic garden at Mirazur. Served alongside a curated selection of snacks, this elegant aperitif sets the tone for a night of culinary exploration. Guests will then embark on a tasting journey that reflects Chef Colagreco’s commitment to sustainability and seasonality. Each dish offers a unique perspective on flavour, origin, and artistry. From June 17 to June 28, the Flower Menu will be served; a celebration of the vibrant colours and delicate forms of seasonal blossoms. Signature plates include Grilled Lobster with garam masala and potato foam, and Merrifield Duck with fresh almond and preserved cherry. From July 1 to July 19, the experience includes Colagreco’s seasonal five-course tasting menu, spotlighting dishes such as Wild Garlic Cornish Turbot and a vivid Green Curry. Then, from July 22 to August 16, guests will discover the Tomato Menu – a tribute to the rich diversity of Isle of Wight tomatoes – presented in inventive and flavourful interpretations that highlight their character and complexity.

Following dinner, guests will then move downstairs at The OWO to The Spy Bar, a subterranean hideaway where they can enjoy a second cocktail, all against the backdrop of The Spy Bar’s unique espionage setting. Evoking a sense of mystery and after-dark seduction, The Fig Noir, a twist on a sweet Manhattan, served on the rocks, is the perfect nightcap. To complete the evening, guests will be given one of The OWO’s signature cocktails to take home, the Martini No.52 – crafted with Boatyard Double Gin, Dry Vermouth, Orange Bitters – taking a piece of this truly special experience with them.

The collaboration will run at Chef Mauro Colagreco’s signature restaurant and The Spy Bar at Raffles London at The OWO from 17th June to 16th August 2025, available from Tuesday to Saturday for dinner. Available by reservation with limited availability between 18:00 and 20:00.
